The Perfect Fall Comfort

Creamy Butternut Squash Soup When the air turns crisp, the leaves begin to paint the sidewalks, and pumpkin spice fills the air, there’s nothing quite like coming home to the comforting aroma of soup simmering on the stove. One of my absolute favorites for this cozy season is butternut squash soup, rich, creamy, and full of fall flavor. This golden bowl of warmth isn’t just a meal, it’s an experience. The silky texture, subtle sweetness, and aromatic blend of spices create that “home for the holidays” feeling we all crave when the weather cools down.     Whether you’re hosting friends for a cozy dinner or simply curling up with a blanket and your favorite candle, this soup is fall in a bowl. 

Ingredients You’ll Need.  

• 1 large butternut squash, peeled, seeded, and cubed

• 2 tablespoons olive oil or butter

• 1 medium yellow onion, chopped

• 2 carrots, peeled and chopped

• 2 garlic cloves, minced

• 4 cups vegetable broth (or chicken broth for a richer flavor)

• ½ teaspoon ground cinnamon

• ¼ teaspoon nutmeg (optional, but adds warmth)

• Salt and black pepper to taste

• ½ cup heavy cream or coconut milk (for a dairy-free version). Optional Toppings: roasted pumpkin seeds, a swirl of cream, toasted croutons, or a sprinkle of fresh herbs like sage or thyme. 

Directions

1. Roast the Squash (for richer flavor): Preheat your oven to 400°F (200°C). Toss the squash cubes with olive oil, salt, and pepper, then roast for 25–30 minutes, until tender and lightly caramelized.

2. Sauté the Base: In a large pot, heat a little olive oil over medium heat. Add the onion and carrots, cooking until soft and fragrant (about 5–7 minutes). Add minced garlic and cook for one more minute.

3. Simmer Everything Together: Add the roasted squash, broth, cinnamon, nutmeg, salt, and pepper. Bring to a gentle boil, then reduce the heat and simmer for about 20–25 minutes, until everything is soft and melded beautifully.

4. Blend It Smooth: Use an immersion blender right in the pot or transfer to a blender in batches. Blend until silky smooth.

5. Stir in the Cream: Add heavy cream (or coconut milk) and stir to combine. Taste and adjust seasoning, add a bit more salt, pepper, or spice to your liking.

6. Serve and Enjoy: Ladle into bowls and top with your favorite garnish.
